This coffee was developed through a custom process designed specifically for Days Coffee Roaster, making it a truly one-of-a-kind offering.

The process combines carbonic maceration, thermal shock, and controlled fermentation in a bioreactor. Carefully selected ripe cherries undergo oxygen-free fermentation, followed by rapid temperature change to lock in complex flavor compounds.

The result is an exceptionally expressive and layered cup.

Expect a unique fusion of fruity sweetness and exotic spice. Notes of apricot and apple are intertwined with pink pepper, star anise, and subtle floral spice, creating a vibrant and evolving flavor experience.
